THE LIFE OF A POTATO

Where are you from?
I was born and raised in Idaho. I lived on a potato farm with my parents, an older sister, and a younger brother. I now live in Utah with my husband and daughter and take care of two orange cats--Perry and Pongo.
What are some of your hobbies?
Reading, traveling, watching movies, and shopping. I also enjoy creating surface pattern designs for fabric. You can see my work here.
What were you like when you were growing up?
I was skinny and quiet. I was never good at sports but I liked to roller skate and ride my bike. I was always reading something.

Why did you write The Life of a Potato?
Like many people, I thought it would be fun to write a book. I wanted to write about something I was familiar with and decided to write a story about my life on the farm. I also wanted my sister to draw the illustrations.
What does your family think of the story?
They love the story and think it's fun to read.
What is your favorite childhood book?
Island of the Blue Dolphins by Scott O'Dell. It's a story about a 12-year-old girl who is stranded alone for years on an island. I was always enthralled by the ways she was able to take care of herself.
What is your favorite potato recipe?
That is a hard question for me to answer. I love potatoes any which way, even raw (try it with a little salt). I do really love simple roasted potatoes.
4 medium russet potatoes (or other potatoes of your choice)
2 tablespoons olive oil
salt, flavored salt, or salt seasoning
pepper
Cut potatoes in 1-inch pieces. The potatoes may be used peeled or unpeeled. Mix the potatoes, olive oil, salt, and pepper in a bowl. Arrange the potatoes in a single layer in a shallow baking pan. Roast at 450 degrees for 45 to 60 minutes or until tender and browned, stirring every 15-20 minutes.
